Great Gluten Free Lemon Squares

First beat together:

1 Cup softened Butter

1/2 Cup sugar

2 Cups gluten free Flour

Once its all crumbly and mixed together (I used an electric mixer for a few minutes), press into the bottom of a 9 x 13 inch pan. Bake at 350º for 15 -20 minutes until it is golden and firm.

Meanwhile…. beat together:

4 Eggs

1 1/2 Cups Sugar

1/2 Cup Gluten Free Flour

1 Tsp. Salt

1/2 Tsp. Baking Powder

3/4 Cup Lemon Juice (the secret is fresh squeezed lemons) 

Pour over baked crust and bake another 20 minutes in that 350º oven. Sift powdered sugar over it and let cool for 2 hours.Cut into squares and enjoy!
